Goldman's book mentioned a huge edit down about Buttercup's trousseau from the (fictitious) original. There are some major changes to the storyline and some fine additions in the film version.

I don't think that films have to be dumbed down, (even if some are) but frequently the qualities that make a book great would ruin a movie and vice-versa.

Like slow pacing. Compressing 600pages into two hours is hard. I mean, the audio boook of Sourcery (for a random example) is 7+ hours. Which is too long for a movie. And that is not an overly thick book.
