Sliced thinly and baked until they're crunchy (preferrably liberally sprikled with Moroccan spices) is the only way they get eaten in my house, otherwise their texture reminds me of a kitchen sponge.

My rule is to bite things when they're raw and if they crunch or go sploosh, then they're cookable but if they squeak, they are not worth it. Eggplants, all of the cabbage family (including Brussels Sprouts), kitchen sponges and mice fall in the latter category.

Now, don't get me wrong, I made melanzale parmigiana on Satuday night and it was really nice. It's just that I have no inclination to eat eggplant again in the forseeable future.

Even at my most extreme state of direness I never seriously contemplated making a lasagne with eggplant.

Coz I woz lucky and someone gave me some done to an Italian recipe and while the sauce was lovely I concur with Robert - old sponge actually has better texture.

Give me brussels sprouts any day and call me Barreeeeeeeeeee!!!!!!!!!!!

My only explanation is that I'm experimenting with stuff for a vegetarian I know. Lentil bolognese is really nice, if anyone's interested!

Eggplant lasagne! I used to make my own pasta and cheese for it.
The cheese, I miss as I don't really have dairy any longer.

I used to make a fresh cheese by bringing the milk to almost a boil tand then turning it off and stirring in just enough lime or lemon juice to make it separate. Use in the layers and use the whey instead of water.......

Why would anyone boil an eggplant? When you can have it virtually melting and in combination with tomato, zucchini and other nice vegetables. Like that ratatouille dish.
Maybe not addict enough to eat boiled eggplant...

I don't know about Emu oil but near me we have an Emo Oil distribution centre.

Perhaps there is some use for the angst ridden teen after all?
